Chili Lime Black Bean Dip

Serves: 6

Estimated Time: 10 minutes

Equipment: Colander, knife, cutting board, measuring spoons, food processor

Ingredients:

2 15 oz cans black beans, rinsed and drained

The juice of 1 lime (~ 4-6 Tbsp if using bottled lime juice)

3 cloves garlic, coarsely chopped, or 1 tbsp jarred minced garlic

⅓ cup fresh cilantro, coarsely chopped

1 jalapeno pepper, seeded and coarsely chopped, or 1-2 tbsp canned jalapeno peppers

1 tbsp chili powder

2 tsp cumin

1 tsp onion powder


Directions:

1.  Place all ingredients in a food processor, and process until smooth, scraping down the sides as you go to ensure everything is mixed


Garnish with cilantro, tomatoes, and cheese.

Serve with tortilla chips, pita wedges, or fresh veggie strips.

This dip is good warmed in the microwave, or room temperature,

132 calories, 8 g protein, 25 g carbohydrate, 1 g fat, 0 g saturated fat, 10 g fiber, 370 mg sodium, <1 g sugar. Excellent source of folate. Good source of Vitamins B1, B6, copper, iron, magnesium, phosphorus, potassium, and zinc.
