Spanish Beans and Toast

Serves: 3

Estimated time: 15 minutes

Equipment: measuring cups and spoons, colander, large saute pan

Ingredients: 

1 Tbsp olive oil

½ large yellow onion, chopped (~1 cup)

4 cloves garlic, minced (~2 tsp)

15 oz can tomato puree

1 tsp paprika

1 bay leaf

1 15-oz can no salt added butter beans

3 cup fresh spinach

Directions:

1. Heat oil in a large saute pan on medium heat, add onions and cook for ~3-5 minutes. Add garlic and paprika, and cook for one more minute.

2. Add tomato puree, beans, and bay leaf, simmer for 10 minutes.

Serve with whole grain toast
