Grilled Swiss and Spinach

Serves: 1

Estimated Time: less than 10 minutes

Equipment: Cutting board, knife, measuring cups and spoons, pastry brush

Ingredients:

2 slices whole grain bread

2 tsp olive oil

2 slices Swiss cheese

¼ to ½ cup fresh spinach leaves, coarsely chopped

Dried basil and oregano to taste

Directions:

1. Place sauté pan on stove and turn heat to medium

2. While the pan is heating, brush 1 tsp of olive oil on each slice of bread

3. When the pan is hot, place one piece of bread, oil side down on the pan. Layer with one slice of swiss cheese, spinach leaves, then the second piece of cheese, and top with the second slice of bread, oil side up. 

4. Cook on medium heat for 1-2 min, turn heat down to low medium and cover with a lid. Cook for another 1-2 minutes, then flip, cover and cook until bread is toasted and cheese is melted.

Serve with fruit or fresh veggies.
