Protein Pancakes with Peanut Butter and Honey Syrup

Equipment: Mixing bowl, measuring cups, electric griddle (you can use a frying pan, but the griddle makes it easier to make several servings in minutes), spatula, small bowl, wire whisk

Ingredients:

Pancakes:

1 cup Kodiak Power Cakes Flapjack and Waffle Mix- Buttermilk*

¾ cup water

Butter or cooking spray

Honey Peanut Butter Syrup:

¼ cup peanut butter (or other nut butter of choice)

¼ cup almond milk (or other milk of choice)

2 Tbsp of honey

1 banana

Directions:

1.  Assemble all ingredients and equipment

2.  Heat sauté pan or electric griddle to medium (325-350 on griddle).

3.  While waiting for pan to heat, mix water and pancake mix in bowl. Don’t over mix.

4.  Once the pan is hot, add butter or cooking spray, and pour batter in 3-4 inch circles. Flip pancakes when batter starts to bubble.

5.  While pancakes are cooking, place peanut butter and honey in a small glass measuring cup, and put in microwave for 30-60 seconds, until softened. Add almond milk and mix well with fork or wire whisk. You can add more peanut butter to thicken, more milk to thin.

6.  When pancakes are done, top with chopped bananas and honey peanut butter syrup. 

*Kodiak Power Cakes Flapjack and Waffle mix is made with real ingredients and no preservatives. You may find other brands at your store that are equally good.

These pancakes freeze well. Store in freezer bags, thaw on counter or in refrigerator for best results.

Store syrup in refrigerator for up to 4 days.
