10 Minute High Protein Italian Salad

Equipment: Cutting board, Knife, measuring spoons and cups, can opener

Ingredients:
6 cups romaine lettuce, chopped
½ cup red onion, halved and sliced thin
20 cherry tomatoes, halved
6 pepperoncini peppers, sliced in thin rings
1 medium cucumber, quartered and sliced
12 -16 kalamata olives, halved
¼ cup pine nuts - toasted or raw
1 15 oz can no-added-salt cannellini beans (or other white bean), drained
¼-½ cup Italian salad dressing
4 tbsp fresh grated parmesan cheese
Directions:
Put all ingredients in a bowl, toss, and enjoy!
Goes great with 15 Minute Minestrone Soup or 5 Minute Roasted Red Pepper Soup w/white beans and Spinach
