15 Minute Black Eyed Peas and Greens

In southern tradition, black eyed peas and collard greens symbolize good luck, wealth, and when combined with tomatoes-good health; eating peas and greens for the first meal of the new year will bring good health and prosperity.

Using canned ingredients and pre-cut onions makes this delicious dish super easy and fast.

Serves: 6 1-cup servings

Time: 10-15 minutes
Equipment: Large saucepan, knife, cutting board, can opener, large spoon, measuring cups, colander

Ingredients:

1 Tbsp olive oil

½ cup chopped yellow onion ( ~ ¼ large onion)

4 slices turkey bacon

2 cups chicken broth

1 14-15 oz can no salt added diced tomatoes

2 14-15 oz cans 15 oz cans black eyed peas

1 14-15 oz can mixed greens

⅛-¼ tsp cayenne pepper

Salt and pepper

Directions:

1. Heat olive oil on medium heat in saucepan.

2. While oil is heating, chop turkey bacon into small diced pieces.

3. Add onions and bacon to the pan and cook for 3-5 minutes, stirring often. While they cook, open canned vegetables, drain and rinse black eyed peas and greens separately.

4. Add chicken broth and tomatoes to the pan, stir while scraping up any browned bits. Increase heat to medium high and bring to a boil.

5. Add black eyed peas and boil for 2-3 minutes.

6. Reduce heat to a simmer and add greens and cayenne (optional), season with salt and pepper.

Serve over rice, with cornbread, or by itself as a soup.

187 calories, 12 g protein, 28 g carbohydrate, 4 g fat, 8 g fiber, 747 mg sodium. Excellent source of Vitamin K, good source of Vitamins B1, folate, Vitamin C, iron, and manganese.
