Blueberry Vanilla Overnight Oats

Serves: 1

Equipment:  2 cup container with lid, spoon

Ingredients:

½ cup oats (can be rolled oats, quick oats, steel cut oats)

¾ -1 * cup unsweetened vanilla almond milk (or other unsweetened milk of choice)

1 tsp honey

¼ cup blueberries

Extra blueberries, and walnuts to top


Directions: 

1.  Mix honey with milk (heating milk for ~30 sec in microwave can make mixing easier)

2.  Place blueberries in the bottom of container and mash gently with the back of a spoon. 

3.  Add oats, then milk and honey, and mix well.

4.  Cover and place in refrigerator overnight. Serve cold or heat in the microwave for 2-4 minutes, stirring well.

* Use more milk when planning to heat in the microwave.

Approximate Nutritional Analysis:

325 calories, 9 g pro, 46 g carb, 12 g fat (from walnuts), 7 g fiber. Excellent source of vitamin E, copper, manganese, and omega 3 fats. Good source of calcium, vitamin B1, magnesium, selenium, and zinc.
