Coconut Curried Ramen

Serves: 2

Time: 10 minutes

Equipment: Medium saucepan, wire whisk

Ingredients:

1  15 oz can lite coconut milk

3  Tbsp red curry paste

2  Tbsp brown sugar

1  Tbsp fish sauce

1 ½ Tbsp cornstarch

1 ½ Tbsp cold water

1  cup frozen mukimame (shelled edamame)

1  package Maruchan Ramen Noodles (or 3 oz other ramen noodles)


Directions:

1  Whisk together the first four ingredients in a saucepan and set heat to medium high. Bring to a slow boil, stirring frequently.  

2  Mix cornstarch and water, then stir into mixture. Boil for two more minutes.

3  Add frozen mukimame and ramen noodles (discard seasoning packet, or save for another use). Continue to boil for 3-5 minutes, until noodles are cooked through.
