Garlicky Beef and Broccoli

Serves: 4

Estimated Time: 15 minutes

Equipment: Large sauté pan, colander, rubber spatula, measuring cups and spoons, cutting board, knife

Ingredients: 

1 pound ground beef

¼ cup low sodium soy sauce

2 tsp sesame oil

2 tsp chopped garlic (fresh, or jarred garlic)

1 tsp chopped fresh ginger (or ginger paste)

1 package Kame Udon Stir Fry noodles

2 cups frozen steam-in-the-bag broccoli

1 cup fresh snow peas

Directions:

1. Cook ground beef in a large saute pan over medium heat. 

2. While beef cooks, cook udon noodles in the microwave according to package directions. When the udon noodles are finished cooking, cook the broccoli in the microwave according to package directions.

3. Mix soy sauce, sesame oil, garlic, and ginger in a small bowl.

4. When beef is cooked through, drain in colander, return to pan, add soy sauce mixture, snow peas, and stir to cook. Cook for approximately 5-10 minutes. Serve over noodles, with broccoli.

To reheat, drizzle with a little water before putting in the microwave, to keep from drying out.
