Taco Salad w/Adobo Ranch Dressing

Ingredients:

Salad

3-4 cups mixed greens

1 15 oz can no salt added black or pinto beans, drained and rinsed

1 15 oz can no salt added corn, drained and rinsed

1 cup cherry tomatoes, sliced in half

2 oz shredded cheese of choices (cheddar, monterey jack, pepper, jack)

Adobo Ranch Dressing

2 Tbsp ranch salad dressing

2 Tbsp milk

1-2 tsp chili peppers in adobo sauce, chopped finely (for less heat, just use 1 tsp adobo sauce)

Directions:

1. Mix ranch dressing, milk, and chili pepper

2. Place greens in bowl and top with remaining ingredients

3. Dress with Adobo Ranch Dressing
