Thai Peanut Wrap

Equipment: measuring cups and spoons


Ingredients:

½ cup mixed shredded vegetables ( I used STO very veggie medley)

¼ cup frozen mukimame, thawed

2 T dry roasted peanuts

2-3 T jarred peanut sauce (I used  House of Tsang Bangkok)

1 8-10  inch flour tortilla

Directions:

1. Mix veggies, mukimame, peanuts, and peanut sauce in bowl and place mixture in the center of flour tortilla

2. Fold long ends of tortilla over mixture and roll up like a burrito

Approximate Nutritional Analysis:

315 calories, 12 g protein, 41 g carbohydrate, 12 g fat, 5 g fiber, 800 mg sodium. Good source of Vitamin B1,B3,  B6, and folate, copper, magnesium, manganese, potassium, and selenium.
