Tuna and Greens (Five under Five) Salad

This is the first in the series ‘Five Under Five’ : Healthy meals you can make in five minutes or less, that cost five dollars or less per serving.

Serves: 1

Ingredients

2  Cups pre-washed mixed salad greens

10  Grape or cherry tomatoes, halved

1   Can tuna, drained

Small handful of croutons

2   Tbsp Italian salad dressing

Directions:

1. Place greens in a bowl or container, top with tuna and tomatoes. Add dressing and croutons when ready to eat.

** You can double or triple this salad for more servings - still under five minutes

** You can purchase single serve salad dressings to make this a quick, take to work lunch

Approximate Nutritional Analysis: 

281 Calories, 34 grams protein, 13 g carbohydrate, 11 g fat, 4 g fiber, 835 mg sodium. Excellent source of Vitamins C, B3, Folate, and K,  Manganese, Phosphorus, Selenium, and good sources of Vitamins A, B6, B12, D, E, Iron, Magnesium, and Potassium.
