15 Minute Minestrone

Serves : 6

Estimated time: 15 minutes

Equipment:  Large saucepan, can opener, measuring cups and spoons

Ingredients:

1 cup Mirepoix *

1 Tbsp olive oil

1 tsp butter

4 cups reduced sodium chicken or vegetable broth

1 28-oz can crushed tomatoes

1 can no-salt-added cannellini beans

1 can no-salt-added kidney beans

1 can reduced sodium green beans

1 can reduced sodium corn

½ tsp italian seasoning

¼ tsp garlic powder

¼ tsp onion powder

¼ tsp pepper

Salt and pepper to taste

*You can find this frozen in many grocery stores. If you want to make it from scratch, here’s a great recipe. If using frozen, take out the night before and place in the refrigerator to thaw, or thaw in the microwave before starting this recipe.

Directions:

1  Heat oil and butter in a saucepan until butter is melted and oil is glistening. Add Mirepoix and saute for 3-5 minutes.

2  Add the rest of the ingredients, bring to a boil. Reduce heat to a simmer, and cook for another 5-10 minutes. 

This recipe pairs great with the 10 Minute Italian Salad

Approximate  Nutritional Analysis:

257 calories, 14g protein, 44g carbohydrate, 5g fat (<2g saturated fat), 11 g fiber, 318 g sodium. Excellent source of Vitamins C and K, iron, and potassium. Good sources of Vitamin B3, manganese.
