Cauliflower Gnocchi with Tomatoes and Peas

Equipment: Cutting board, knife, large sauté pan, large spoon

Ingredients:

2 Tbsp olive oil

1 Package Trader Joe’s Cauliflower Gnocchi

1 10 oz package cherry or grape tomatoes

1 ½ cup frozen green peas

2-3 cloves garlic, chopped

4 Tbsp fresh grated parmesan cheese

Salt and Pepper to taste

Fresh lemon juice to taste

Fresh or dried basil, oregano, parsley to taste

Directions:

1. Heat oil in a large sauté pan on medium to medium-high heat.

2. While oil is heating, slice tomatoes in half lengthwise, and place in oil

3. Once all tomatoes are in the pan, cook alone in the hot oil for another 2-3 minutes. Chop garlic.

4. Add frozen gnocchi, moving aside the tomatoes to make sure that each piece is touching the hot pan. Stir every 2-3 minutes, adjusting temperature downward as needed. While gnocchi cooks, heat frozen peas in the microwave for 1 minute.

5. Cook gnocchi and tomatoes for another 5-7 minutes, then add chopped garlic and green peas. Cook for another 2-3 minutes, until garlic is soft and gnocchi is fully cooked. Drizzle fresh lemon juice over entire dish, to add brightness to the dish.

Season with salt, pepper, and herbs to taste, and garnish with parmesan cheese.
