10 Minute Bacon, Egg, and Cheese Sandwich

Ingredients:
2 eggs
1 -2 tsp oil or butter
1 oz shredded cheddar cheese
1 slice turkey bacon
1 Thomas’ Bagel Thin (Everything bagel used for this recipe)
¼ avocado, sliced - optional
1 slice tomato - optional
Directions:
1. In a small saute pan, cook turkey bacon over medium heat, turning as necessary
2. While the turkey bacon cooks, heat oil in another small saute pan.
3. Crack eggs into bowl, add splash of milk, and whisk
4. Cook eggs in the saute pan as desired (fried, scrambled, or omelet), add cheese.
5. While bacon and eggs cook, slice avocado and tomato.
6. Assemble sandwich by layering egg and cheese, bacon, and optional toppings.
Egg and cheese mixtures can be frozen and used later. To freeze, cool to room temperature, place in a freezer bag, and store in the freezer for up to one month. Thaw by leaving it in the refrigerator overnight. Reheat in the microwave for 30 seconds. (Reheating frozen egg in the microwave will cause the egg to be tough
