Roasted Red Pepper Soup with White Beans and Spinach

Equipment: Medium saucepan, can opener, knife, cutting board

Ingredients:

1 carton Pacific Foods Roasted Red Pepper and Tomato Soup

1 can no salt added white beans, drained and rinsed

2 cups fresh spinach, coarsely chopped

Directions: 

1. Put soup in a saucepan and turn heat to medium high, add beans and bring to a boil.

2. Take the pan off heat and add spinach to wilt.

Serve with a side salad or fruit, and a piece of whole grain bread or crackers.

Also goes great with Italian Salad
